Every Venezuelan knows the name: the chorizo of Carúpano, the port town in Sucre where smoke and garlic became a regional signature. It's the sausage that shows up in hallacas at Christmas and on grills all year.
Smaller and smokier than its Argentine cousins, with a garlic backbone that doesn't apologize.
We make ours in-house to the oriental profile — a nod to the Venezuelan side of our kitchen family, the same one that brought the tequeños.
